Why Sourdough?
Sourdough is more than just bread—it’s a time-honored tradition of natural fermentation that creates loaves with deep flavor, a crisp crust, and a soft, airy crumb. Made with just flour, water, and wild yeast, sourdough is easier to digest, rich in gut-friendly probiotics, and lower in gluten than conventional bread. The slow fermentation process enhances nutrient absorption, giving you a wholesome, nourishing loaf that’s as good for your body as it is for your taste buds.

Our Sourdough Starter
Our sourdough starter is a staple in our recipes. We use organic unbleached bread flour, organic rye flour, and filtered water to create our perfectly balanced starter.

A look into our sourdough: The 24
hour process
9:30pm (the night before) - Feed sourdough starter
9:00am - Autolyse (hand mix flour and water)
9:30am - Assemble ingredients and hand mix
10:00am - The first stretch and fold procedure to strengthen the gluten
10:30am - The second stretch and fold procedure to strengthen the gluten
11:00am - The third stretch and fold to strengthen the gluten
11:30am - The fourth stretch and fold to strengthen the gluten
4-6 hour bulk ferment (rise)
2:00pm - Divide & Pre-shape the dough (work to tighten the dough); Let the dough bench rest
2:50pm - Shape the dough
3:00pm - 9:00am - Place in fridge overnight to slow ferment (second rise)
9:00am - Bake
Our sourdough has absolutely NO preservatives and therefore has a shorter shelf life than store bought bread.

Orders can be picked up after 2:00pm on Friday. All orders must be placed by 5:00pm on the Wednesday prior to pickup due to the 24 hour process of making our sourdough.
